What’s not to love about salmon!?! It’s full of protein and Omega 3 fatty acids. I would say it’s one of the healthiest foods out there.  I grabbed a package today for our dinner tonight and made up this recipe.  It’s not an exact science, but it was loved by all mouths at my house tonight so I’m going to call it a success and share it. I served it with a side of cauliflower rice on our kid-friendly melamine picnic plates :)

Fresh salmon.  Enough for 5 servings
3 Tablespoons of mayonnaise
1 tsp of dried lemon and dill dried seasoning (I used Demarle brand but there are other brands out there.  You could also substitute a squeeze of fresh lemon and chopped, fresh dill.)

Stir these three ingredients together in a small bowl.  Place the salmon right on a big piece of heavy duty aluminum foil and spread the seasoning mixture over the salmon.  Wrap it up in foil and cook on the grill until cooked through and flakey – about 20 minutes.   Quick.  Healthy.  Delicious!

I wrapped up the salmon in an aluminum package and set it right on the grill.  This makes a great little steamy oven for the salmon to cook.

  1. Yum! We had grilled salmon last night! Love it. I’ll have to try this recipe and the cauliflower rice. We just had plain white rice and my husband commented that if the zucchini and salmon weren’t so juicy the rice wouldn’t have been okay.
