Our neighbor brought us two plastic shopping bags full of fresh lemons recently. All I could see was Lemonade for months!
Juicing all the lemons with my Citrus Juicer was quite a task, but I didn’t want any to go bad. This is an excellent job for kids to do! I then froze most of the juice in ice cube trays. After they freeze, I pop them out and store the cubes in quart size Ziploc Freezer Bags for future use. Each individual ice cube is 2 oz. or 1/4 Cup for future reference. Every time I want lemonade or need lemon juice for cooking, I just pull out the amount of cubes needed and thaw. I haven’t had good luck with the store brand freezer bags for long period of times so I tend to stick with name brand freezer bags.
We use the Best Lemonade Ever recipe from allrecipes.com and altered it to our liking. I love my lemonade more tart than sweet so I add about 1/4 Cup more lemon juice and only use 1 1/4 Cup sugar. My husband loves it sweeter so when he makes it, he follows the recipe as written.
The Best Lemonade Ever
Original recipe makes 20 (4 ounce) servings
1 3/4 Cups white sugar
8 Cups water
1 1/2 Cups lemon juice
In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
Remove seeds from lemon juice, but leave pulp. In pitcher, stir together chilled syrup, lemon juice and remaining 7 cups water.
