Anytime I find a recipe that both my kids and husband like its a win win win win situation.
This recipe is my latest victory thanks to a sister-in-law who made this for both our families while we were on vacation together. She served it with yogurt choices and fresh blueberries and strawberries. I’ve made granola before that my family didn’t like so I gave up. I couldn’t stand seeing homemade granola go to waste so I’m super happy that ALL of us like this recipe. I love a good homemade granola base that you can add whatever you want – dried fruit, more nuts, seeds or anything you want.
Cinnamon Maple Granola
3 cups rolled oats
1/4 cup whole wheat flour
3/4 cup unsweetened coconut flakes
3/4 cup sliced almonds
1/4 flax seed
1/2 tsp cinnamon
1/2 cup real maple syrup
1/2 cup safflower or sunflower oil
1 tsp vanilla
Preheat oven to 300°F. Mix all dry ingredients in a medium sized bowl. Mix wet ingredients in a separate bowl. Combine dry and wet ingredients together until evenly coated. Pour the mixture onto a greased baking sheet and spread to cover evenly. Bake for 30 minutes. Stir and bake another 20-30 minutes depending on preferred doneness. Store in an airtight container.
